What’s that? Over there – in the water…

Is it a torpedo?
Is it a lightning-fast eel?
No, it’s SOUPer Starter! Protector of humans at large from the flavourless and bland, the tasty avenger Souper Starter will race to the rescue. This vegetable-based powerhouse lends itself to a variety of meal choices:
- Add some to boiling hot water for a fortifying drink
- Stir into soup or stew for extra veggy punch
- Mix into dough for flavourful breads, biscuits and crackers
- Use it with nutritional yeast for a satisfying, hearty gravy
- Marinate meat or add it to breading
- Combine it with stuffing ingredients
There are probably more things you can do, but I’ll let your imagination take you there. 🙂 To summon this valiant crusader, gather the following:
- One small can of tomato paste (about 126 ml)
- 1 Tbsp Soya Sauce
- 3 Sticks of celery (110 g)
- 2 carrots (116 g)
- 1 celery root (143 g)
- 1 small zucchini
- 1 head of garlic (28 g)
- 2 leeks (265 g)
- 6 sundried tomatoes (20 g)
Mince the zucchini, omitting the inner seeded section (this would make the starter too watery)
Grate the carrots and slice up the celery.
Admire the celery root. What a magnificent beast! Slice off the outside layers and grate the root well.
Trim the slim leeks and slit them from end to end. Wash them well to get any soil off and then slash them to bits.
Finally, cut the sundried tomatoes into slivers and slice those into tiny pieces so that their pungent flavour will spread throughout the dish.
Is the carnage over? Not by a long shot! Throw all of the vegetables into a large dutch oven and combine them with the soya sauce and tomato paste. Use an immersion blender to smooth the vegetables into a paste. Clean an ice cube tray (I mean SOUP-mobile) and sprinkle it with water.
Add 2 Tbsp of starter to each seat of the SOUP-mobile.
Cover the vehicle with a cloak of invisibility (plastic wrap) and propel it to the arctic region of your abode (a deep freezer is best). It will not freeze completely in the freezer, but there it will keep for many months, waiting to answer your urgent call.
