Simply Versatile, Simply Delicious

As you know, Kountry, oatmeal is something of a staple for Himself. I’m pretty sure it would be near national disaster and state of emergency levels of we ran out. 😉

Himself is rather content to just eat it after cooking it in boiling water. But I get bored easily with this. I need to mix it up beyond just steel-cut or large flaked oats. The nice thing is that oatmeal is versatile and willing to accept different flavours.

An easy fix for the boring oatmeal is to cook it with milk or a mixture of milk and water, and add some dried fruit and flavourings. If using large flaked oats, this cooks very quickly. Here’s what you need:
4 c skimmed or nonfat milk, you could even use almond milk if you wish
3 c of oats
1/4c dried cherries or blueberries or both
1/4 c of cut apricots
1/2 – 1 tsp cinnamon
1/2- 1 tsp pure almond extract

Here’s what you do:
Heat milk in pan until it’s at a simmer, lower to a low simmer and add the dried fruit. Give it a stir and then then add the oatmeal. Stir often until oatmeal starts to thicken. Add your cinnamon and almond extract and a small dash of almond extract if you wish. Continue stirring and cooking until creamy. In total, this shouldn’t take more than 6-8 minutes once you have a high simmer.

Let cool for a minute before eating, or cool completely and cover, storing in the refrigerator for up to two days.

I make this the night before, and in the morning I can either eat it as is or add a splash of milk and then heat in the microwave.

To mix it up I sometimes use different fruits, add nuts and change the flavouring. The nice thing is oatmeal is healthy, nutritious and delicious.

  1. You’re right, Town – our oatmeal recipes ARE pretty similar! 🙂 Maybe if I tried yours it would be harder to slop it down my shirt!
    Thankfully my blue shirt came out of the wash unscathed. 🙂
