Velvety Chocolate Breakfast Mousse

Town, I don’t think I’ve ever met a chocolate mousse I didn’t like. The fact that this one is for BREAKFAST throws me into a spin of giddy excitement!

I only make one serving at a time (it helps me know when to stop) and it’s so fast to put together that I don’t mind making it the night before – that lets me dream about the chocolate I’ll be having all night long. What could be sweeter than that?

To do this, you need a 2 cup jar, a spoon and the ingredients below:

  • 3/8 cup oatmeal
  • 1 Tbsp cocoa powder
  • 1/4 cup greek yogurt
  • 1/2 cup dark chocolate almond milk

First, put in the oatmeal.

Now layer in the cocoa.

stir 1

Measure out the yogurt (I used strawberry).

Stir. Don’t worry – it SHOULD look clumpy – just like this:

stir 2

Now for the chocolate almond milk.

almond milk

Stir one last time.

stir 3

At this point, your work is done and the refrigerator takes over. Leaving it in the refrigerator overnight means the oatmeal has time to soften and meld with the yogurt and milk.  I have to say that the first time I tried this, I was worried, but I had no reason to be. The oatmeal thickened the liquid while the liquid somehow made the oatmeal taste smooth and soft. How is that possible? I don’t know, but I’m happy to eat the result! Enjoy!

  1. Town, you know that old saying, “What’s good on the inside is good on the outside?” I lived it today. My first taste of oatmeal was good but then I accidentally slopped a whole spoonful down the front of my bright blue shirt. At work. Maybe this will have to be my at-home treat….
