Rummy Strawberry Boterkoek Roll

Some small part of me has always wanted to be a pirate, methinks.

How else can you explain my insistence on rum in my food, the inflatable sword in the umbrella stand to brandish at intruders, or the irresistible urge to shout, “Arrrr!” and “Avast ye matie!” at interesting times? The clincher? I sleep really well on a boat AND I can’t swim. What more is there? 🙂

Today I’m indulging my inner swashbuckler with a rum-filled jellyroll. Who knows if pirates ate them, but this one sure will!

Golden Boterkoek coating:

  • 1 cup melted butter
  • 1 cup white sugar
  • 1 cup white flour
  • 2 eggs
  • 1 tsp lemon juice
  • 1/2 tsp rum extract

Sweet Strawberry Treasure:

  • 1/2 cup Smucker’s strawberry jam
  • 2 Tbsp maple syrup
  • 1/2 tsp rum extract

Simple! I bet all that stuff is in your run-of-the-mill galleon galley!

Here’s what to do:

On a calm sea while the wind is low, combine all of the boterkoek ingredients in a bowl.

Get out your trusty rimmed baking sheet. Line it with aluminum foil and then insert a layer of parchment paper. Pour the batter in and spread it out as evenly as you can – that’s hard to do with a cutlass, but give it the old college try.

Preheat the oven to 350 degrees Fahrenheit. Slide in the baking sheet and set a timer for 15 minutes.

Since there isn’t much time and jellyrolls like to be rolled while they are warm, on we go to the filling. Combine all the strawberry treasure ingredients in a small saucepan and heat it on low so that the mixture maintains a loose consistency. Every pirate likes a fast and loose treasure, no?

When the timer goes off, take out the cake and use the parchment paper to gently lift it out of the pan and onto the counter. Spread it evenly and thinly with the jam mixture.

Now use the parchment paper to slowly and carefully roll the cake into a jellyroll.


This is a rich cake, so cut the cake into 16 equal portions.

Voila! A happy ending!

  1. Kountry you know as well as I do that without Polly the Parrot and a sturdy peg leg and/or eye patch you won’t qualify for a pirate! Having said that, I can’t say that I’ve ever equated a jelly roll with a pirate. Well done. Now if only I could actually roll the thing up! Well done for you!


    • I’ve never seen the peg leg or the eye patch and I’m worried for polo the parrot. Did you stuff her and cook her? I’ve got a recipe somewhere for roasted parrot….
