Pleasing Potatoes

Himself has this thing with potatoes. It’s as if they are sacred or something to him. A meal is simply not complete, not in his eyes, if the potato doesn’t make it.

So of course this means there tends to be potatoes left over and sitting there waiting to be used, because he also has a habit of cooking too many. Me, I’m not h epistles biggest fan. Truth be told, I’m okay if it doesn’t how up in a meal, but well then there are mounds waiting to be used.

We’ve been keeping insane hours this past little bit, too many functions attend. Functions that serve basically only appetizers and run on into the early hours of the morning. Functions that leave a person hungry, too tired to do much in the name of cooking and desperate for something that is comforting.

Enter, stage left, the potatoes ready for their moment in the spotlight. And in this meal that’s exactly what happens to them, mostly because its potatoes soup and so you pretty well have to concede they are the star. Can’t be helped.

Here’s basically what we did after getting home and being only slightly wet and cold.
5 already baked potatoes, large size, peeled
A tiny splash of oil
1 medium onion chopped
1 1/4-1/2 c of chicken broth (it was left over from something else)
2 tbsp flour (to help thicken it up, but not necessary)
2 c milk (divided into 1/2 c and 1 1/2 c)
2 “dull” scoops sour cream, roughly 1/4 c
2 healthy dashes salt (trust me you need this)
2 dashes of pepper, or more to taste
Crumbled bacon
Shredded cheese
Sliced green onions

I know seems like a large list for people stumbling in after. Along night, but it’s not that bad and it works like a charm.
First heat the oil I a pain and sauté your onions until they are soft and fragrant. (I’d be worried it the onion ever stops shave an aroma to be honest. I’d be very worried, about my sense of smell that is!)

To the sautéed onions add the broth and let cook while you mix the 1/2 c of milk with the flour, if you are using.
Mix the flour and milk together really well and then add to the broth. Let come to a boil, stirring often and allow to boil for a minute or so. Again only if you are using the flour, but the potatoes will act as a thickener too!
Add the rest of the milk and the salt and pepper.

Cut the potatoes and place in the pot, you want to heat them through and then mash them into a nice thick soup.
Toss in some of the bacon.

Just before serving, add the sour cream, stir.
Ladle into bowls or mugs, add green onions, bacon, cheese and enjoy. Just the thing!
