3 Ingredient Cookie #2: Peanut Butter Creme

Remember when you were little? Did your mom make cookies and let you eat some of the dough?

I don’t remember if my mom let me, or if I just snuck it out of the bowl. I DO know that we all fought over who got to “lick out the bowl” – it was a fierce competition, depending on what kind of goodies were going into the oven.

I’m still a little kid on the inside and there are still times when I long for cake batter and cookie dough. That’s why this recipe appeals to me – it looks like cookie dough without all the scariness and drama of raw egg consumption. Yay!

This recipe was given to me by a friend who makes these cookies for Christmas. I still look forward to getting her cookies each year. She makes these cookies with 4 ingredients, so I did that today too, but you can easily get by with just 3 and have fantastic cookies.

Here’s what you need:

2 cups of peanut butter

1 cup sweetened condensed milk

1/2 cup white sugar

That’s it! Combine all three in a bowl with a spoon. Once the ingredients are well incorporated, make small cookie-dough-like balls in the palms of your hands (I use a Tbsp of dough at a time) and put them on a baking sheet lined with waxed paper. Once all the dough has been made into cookies, put the tray in the fridge and let the cookies set for about 15 minutes. Eat them as you want them.

Today I put chocolate chips in mine. If I had carob chips, they would have gone in instead – they are AMAZING with peanut butter!

Think I’m going to go eat some cookies now before they’re all gone!

  1. I don’t think raw egg was ever an issue for me as I recall eating the cookie dough raw and being feed luscious Caesar salad which contained raw egg. Hmmm does that mean my mother played Russian Roulette with my health?!
